In your gas grill's smoker or other type of smoker, place the fish chunks skins down as mentioned earlier and they shouldn't be touching each other. Use big adequate portions so that you stretch area. This is so because since you wish some room in the middle of pieces, smaller but more numerous portions would mean not adequate room for all your fish.
